I always thought it was one child per egg, excepting the occasional identical twins (or if you're a tree, just shoot a root, you sucker).
One each? Not much of a clutch for the egg-fest, but the joke might have been on us, as Easter just missed April Fool's day. That would have set up more jokes than the latest clerical scandals.
