Generally it's a substrate material. I can see moving in after faze one of a multiple faze project. I liked that they compared it to barn hay. But even doing the all plywood interior minimal thing can look dodgy. I can see sacrificing appearance for economy and structure. But as just a style I don't think so. Also that off gassing! Baltic birch is hot.
