I'm sure there is a hack somewhere to turn off window drop shadows. My quick search didn't turn it up though. My guess is that most of the little things that annoy you on first switching to a new OS will at least fade to irrelevant after a few weeks of use. But that's different than saying Apple's choice is always the best one.
The good news is, brushed metal windows notwithstanding, graphic "eye candy" aspects of the interface have been consistently toned down with each release of OS X.
