La Broche
1155 Brickell Bay Drive, Miami, 305-415-0070

Chef Angel Palacios is the best thing to happen to South Florida food lovers in a long time. It takes a wizard to carry off a dish such as foie gras foam, but it's all in a menu's work for this dazzling young chef who may finally open Florida eyes and taste buds to the fact that some of the greatest culinary excitement in the world emanates from Spain. He and the best-trained staff in town have created a scintillating temple for the culinary adventurer with discussion-provoking dishes such as sardines with guava, asparagus with razor clams and Roquefort cheese and intensely flavored lobster gazpacho for starters. Main courses change every few weeks, but if you see it, don't pass up lamb with mushrooms and orange, turbot with demiglace filled ravioli or bacalao with almonds and mango. Don't overlook the impressive talents of wine director Albert Omahen, the best sommelier in town; his recommendations are unfailingly sublime. La Broche is not for the faint of culinary heart or diners on a budget, but it is one of the most impressive restaurants to hit Florida in ages. -- L.F.
