this is all i can muster from memory...someone else will have to supply the desserts - and i'm sure something else is missing...but all of these taste memories are intense:

kumamoto oyster, vinegar jelly
foie gras, anchovies, chocolate
rabbit sausage, mustard cracker
smoked eel, cucumber salad
langoustine, toasted rice broth, hazelnut oil
sardines, nori foam
poached egg, parmesan rind broth
squab, squab skin
loin of lamb, goat cheese
pork belly

i can't remember what was with the pork belly, that might be because it was so incredible on its own that it overshadowed its accoutrements, or it might be because of the

cotes du roussillon
semillon
cava
tinto de toro
piedmont cab/barbera
& carignan

Nice memory. I hit the wall after the lamb. It's pretty fuzzy from there although I do remember puking all over the sidewalk outside. Yeah, I'm pretty sophisticated.

butternut squash sorbet, coffee dirt, caramel tuile

rum-soaked banana, banana wafer, milk chocolate ice cream

Just for historical accuracy, the tasting menu actually stopped with the squab round. But we didn't feel like we had eaten enough meat at that point so we ordered two more meat courses.

The more I think about that meal the more amazing it seems.
