My butcher Jeffrey (in the Essex St. Market) recently started carrying these super fresh free range no anti biotic chickens. They're in the case complete with feet and heads. He loves holding them up and freaking people out. "Go on, touch it - it's warm. This chicken was running around 12 hours ago." (They're not really warm.) We had him take off the head and feet (which he throws in the bag with the rest,) but it turns out to be a little more complex than that to get them to what I recognize from my suburban background.
