While 10 Downing attracted a good deal of press for its epic delays, it's not the only restaurant to make the fall previews two years in a row. Meet Co. Pizzeria, the long anticipated project from Sullivan Street Bakery's Jim Lahey, first announced in Summer '07. The pizzeria's original projection of December '07 came and went and we haven't heard much from the burgeoning pizzaolo all year. Until now that is. Longtime Sullivan Street Bakery disciple Ed Levine got a sneak preview of the setup last week and brought along Slice to document it. What they found:

“The Lahey Love Comes to Pizza”
Sullivan Street Bakery’s bread guru Jim Lahey has opened a new pizza place just in time to ring in 2009. Simply called Co., and located in an sleek urban cafeteria setting in Chelsea, the restaurant features starter platters of meats, cheese, breads and toasts ($4) topped with the likes of chicken liver, roasted eggplant, pinto beans as well as salads (on the extra small side) like escarole, breadcrumbs capers, anchovies, lemon and olive oil, and butter lettuces with pumpkin, pumpkin seeds and olive oil (both $7).
Pizzas are this breadman’s pride and joy, and he’s serving nine pies (puffy crusts, ample toppings, and smoky, just-charred-enough bottoms) ranging from a $7 rosa topped with simple tomato sauce, to a $21 “Special Pie” loaded up with Brussels sprouts, béchamel, shaved chestnuts, bufala mozzarella and smoked bacon. In between the two extremes you’ll find a ham and cheese pie topped with prosciutto, pecorino, gruyere, mozzarella and caraway ($14), and a Popeye, crowned with spinach, black pepper, garlic, gruyere, mozzarella and pecorino ($17). Wine, beer and freshly baked pizzas? What’s better?
