bill, this sounds much more foolproof than the hecker buns, just trying to figure out when to start so i will be home at the crucial points seems the hardest part. are you trying it?

ok im trying it now with half whole wheat half white, if lucy wakes us at the crack of dawn as usual i should be able to do the second rise and bake before work. v curious!

finished. hardest part actually waiting till the loaf cools to slice and eat. the results are incredible! i didn't have time to bake before work so stuck it in the fridge for 10 hours of suspended animation, then set out on the counter for about an hour before baking. highly recommended.
