Texas nachos. am curious to hear from the dmtree texans. i make a version of nachos for ryley with each chip given certain toppings per his specifications. glad to hear there's some history on this.

See those one's in the picture. That is close to perfect although I also put refried beans on mine The orange cheese should be cheddar, I prefer a sharp NY but also tolerate a white Jack cheese or mixture is fine but you won't see me going to that much trouble too often. At Armadillo World Headquarters in Austin in the late 70s before it shut they served theirs on chalupa shells, which is what you would have if you unfolded a crispy taco. I ate them like that for many years and to this day including last week might have them for late breakfast (sometimes I break taco shells in half or here in NY if I can find a good bag of mostly unbroken round corn based chips will go that way) and might go many days in a row having them at least once a day or until the ingredients run out. I would never tell Ryley how he ought to eat them, unless he were making them for me and then...there above pretty much states my preference, I don't want to get in a fight about it but don't push me. You did ask for Texan opinion right?

While we wait for the rest of the Texans let me also say that the crap liquid orange cheese poured over chips and topped with a pile of pickled jalapenos served at sports stadiums is in my opinion while obviously not holding up to highest culinary standards pretty damn delicious in the 4 inning or third quarter with 30 to 70,000 of your best friends screaming around you and a cold beer between your legs

I'm with everything jimlouis said in his first comment, but only the beer part in the second. And, I find Mission brand a quite acceptable grocery store chip.

im thinking that jimls defintion of best friends are people that pay him no mind but will share in his delusion that the beer is actually cold and the nacho sauce resembles cheese.
