Yes, Cauliflower. Dan Barber recipe. Very good and super easy, although I think it needs one more component.

Cut two ~1 inch thick "steaks" from the center of a cauliflower. Pan sear in a cast iron with a little bit of oil. About 2 minutes per side or until you get the color you want. Then put in 350 degree oven for about 10 minutes.

Cut the florets from the rest of the cauliflower. Mine came to about 3 cups. Cook in 1 1/2 cups water and 1 cup milk for 10 minutes. Drain and reserve liquid. Transfer to a blender and blend, adding as much of the liquid as needed to get a light airy puree. Salt to taste.

Pretty interesting for such little work. But needs something (salty, acidic, crunchy?) Capers? Something pickled? I don't know yet.
