So reading about secreto on line, it seems like there are different secretos depending on the culture and/or butcher. (They are many ways to partition a pig.) Some people use it to refer to part of the belly (similar to skirt in beef). Some use it for part of the shoulder (similar to flat iron in beef.) Do you know where this cut is from, or is it a ... secreto.
