While this type of vinegar is called "black vinegar", this vinegar has a naturally developed light amber color. On the palate, it has a rich, malty taste but that is not too heavy. This is a very versatile vinegar and great as a seasoning for making vinaigrette, making sushi rice or even drinking with apple juice or sparkling water. This is also ideal as a finishing touch to splash on a soup, stew, grilled food.
