oh that's not my line, my friend thinks meat s/b grilled, roasted, broiled, BBQ's etc......I personal do not like at all sous vide, too soft, had a meal at a top NYC place and the chicken was SV and it was terrible IMHO and I loved that place.....i like roasted or grilled......my friend likes to joke that real old people like SV as its easy on the dentures
