From Lambertville NJ, a series of books (3 a year) written, photographed & illustrated by former (founding) editors of Saveur. One of them came to our Farmers' Market last week where we served grilled italian sausage and (raw) oysters. Fatty briney. We'll do paella in the fire pit when she comes back.

adman is making a birthday gift to kp of a hand made clay oven. log cabin base filled w/ rubble topped w/ fire brick. a mound of sand creates the dome mold which is covered w/ wet news paper and a thick layer of local back yard clay. the sand is removed the next day and a small fire begins the curing process of the clay. thats where he is now in the process and when this shot was taken. it will take a brick arch for a door, a chimney hole and two more layers of clay and more fires to complete the build. he has all kinds of plans for what to cook along w/ the pizza and bread including MEAT products.

from memory: the plinth (wood base) is 48" square x 3 1/2' high. the dome i think is about 34" wide and say 26" high inside. those are all approximations. adman can correct them, but i think hes working on it right now.

The base is 30" high. Inside dimension of the dome is 15" high by 32" across. Just in from building the brick doorway surround and chimney.

the plans were gleaned from one of the river cottage series books on bread. this is their meat book.

heres some rc tubage. (ad-ver-tizz-mints) the clay dome wont last forever so the parts can be dragged around reused and rebuilt. but the timers also wont last forever either as not pressure-treated. so cook fast before the world ends. i think that guy hugh was in flight of the concords.

They are not really meant to last forever, but the timbers are resting on several inches of modified stone so they won't pick up too much moisture. And I am thinking about applying a lime wash over the oven to protect it from the weather, unfortunately we'll lose the nice color of our Pipersville clay.

2nd layer of clay in place. this layer has sawdust mixed in for insulation. one more finish layer of pure clay to go. then a lime white wash for weather protection. pizzas by fall?
