Random food thought ... Pasture raised chicken, medium rare. Cook using sous vide long enough to pasteurize, then eat like a lion with a fresh kill.

I leave the skin on and give it a quick saute to crisp it up. Gotta have some browning. The pink myoglobin takes some getting used to.

I was served SV chicken at a top restaurant in NYC, a place I adore, and it was the only time I wanted to send food back in my life, but I slugged it down...it was nothing short of aweful, it was grilled after, NG!!
